Healthy Strawberry Banana Popsicles

The melody of the ice cream truck coming down our street always found us kids begging Mom for something cool on a hot summer day. The sweet treats found on the truck were not so nutritious, but fun all the same. Here’s an alternative that includes good-for-you ingredients. You will just have to hum your own tune as you open the freezer.

Strawberry Banana Popsicles

Ingredients

  • 12 large strawberries, sliced
  • 1 large banana, peeled
  • ½ cup pineapple juice

Special Equipment

  • Popsicle mold

 

Directions

  1. Blend all ingredients together on high speed until smooth. Scrape down the sides of the blender as needed as you go.
  2. Pour the mixture into popsicle molds. Freeze for 2 hours, then put a wooden popsicle stick in the middle. Continue to freeze for an additional 6 hours or overnight.
  3. Run popsicle molds under warm water to easily remove.
  4. Enjoy!

Try other fruits and juices. The method’s the same. The outcome—a fun and nutritious way reminder of summers passed.
